Pesto burgers

With this quick and easy recipe you get 4 delicious pesto burgers that you can eat however you prefer! Yum!
As usual, this recipe is affordable and easy to make. We love proving that a plant-based diet doesn’t have to be difficult or expensive!

INGREDIENTS

  • 2 cups of cooked white beans (any kind)
  • 2 cups of fresh basil
  • 1/3 of a cup of toasted pine nuts
  • 1 garlic clove
  • 2/3 cups of homemade plant-based parmesan
  • 1/2 cup of bread crumbs
  • Salt
  • Olive oil

INSTRUCTIONS

Wash the basil and toast the pine nuts in a pan.

In a food processor, blend the beans, pine nuts, basil, parmesan, garlic and a pinch of salt. You can also add a bit of olive oil to taste.

Our processor was too small so we ended up having to take some of the mix out to blend it separately, haha.

It was clearly too much for it to process…

Anyway! Once you’ve got the thick paste, put it all in a big bowl and add the breadcrumbs. Mix it well until you form a nice ball.

That’s it!

Cut it into 4 pieces and form the burgers with your hands or a burger press.

Just look at how pretty they are…

Cook them in a lightly greased pan for around five minutes each side, until they are golden brown.

We served them in a bun with rocket, pine nuts and some spirilized veggies. I think it’d be amazing with some extra pesto, sun-dried tomatoes, vegan mayo… I’m drooling!

Ingredientes

  2. Transfer the paste to a bowl and add the breadcrumbs. Mix well until you form a ball.

  3. Cut it into 4 pieces and form the burgers with your hands or a burger press.

  4. Cook them in a lightly greased pan, around five minuted each side until golden brown. Careful not to burn them!

  5. We served them in a bun with spirilized veggies, rocket, pine nuts... Some vegan mayo and sun-dried tomatoes would be amazing as well!
